If you're having any kind of tummy trouble, probiotics are key! Your gut needs good bacteria to thrive and feel well. A fun and easy way to get your daily dose of "good gut bugs" is to introduce homemade coconut yogurt. Kids love it! And I love that I can eat it sweet or savory. I use it as a substitute for dairy products like dairy yogurt and traditional sour cream. It's one of our favorites for breakfast, lunch, or dinner! 

Ingredients

2 cups Arroy-D Coconut Milk or Coconut Cream (my fave!)

4 tsp arrowroot starch (optional - for thicker yogurt!)

Vegan yogurt starter

1 tbsp Cocoyo live probiotic coconut yogurt

Directions

  1. Boil 2 cups of coconut milk or coconut cream in a pan on a stovetop or directly in your Instapot.
  2. Mix the rice flour or arrowroot with a small amount of warm coconut milk and whisk light to avoid lumps.
  3. Pour the mixture to the boiling pan. Stir well to avoid lumps. Switch off the heat and let it cool.
  4. After it cools down to about 100 degrees, add 3 tbsp of warm coconut milk and arrowroot in a bowl, add the yogurt starter, and whisk until smooth. Transfer back to the pot.
  5. Pour the coconut milk mixture to a mason jar and place it inside the Instapot. Close the lid, press the "Yogurt" setting and set to 10 hours.
  6. Refrigerate for a few hours to cool and thicken.

Serving suggestions: pair it with salt and cucumbers for a refreshing salad; scoop it onto a waffle with honey and blueberries; use it in a smoothie for that probiotic pick-me-up!
